It’s Wednesday, and that means Pintxo is offering $10 off every bottle of wine and cava in the house! That’s right, just a little something to help push you over this mid-week hump.
This week we’d like to highlight one wine and one cava, both brought to us by August Wine Group. August specializes in bringing the Seattle area some fantastic wines from small vineyards, and we just love that. It is for this reason that we’ve asked August to team up with us, and the lovely Spanish Table to host a wine tasting dinner December 15th. More about this to follow…for now, back to the wine!
Wine and Cava…
This Wine Wednesday, we’d like to recommend that you stop in and grab a bottle of either our Giro Ribot Brut Cava or a bottle of our Parmi L’Infant 2007. Both are incredible finds, and both are $10 off for the bottle!
Giro Ribot Brut
A fascinating, storied family, the Giró clan has deep roots in the Penedes region of España, and also in the Champagne region of France. They are cultured, distinguished people making cultured, distinguished wine, and have for at least five generations. In that span, they have acquired a mastery of Cava.
Our Brut Cava is 50% Macabeo, 20% Parellada, 20% Xarel.lo, and 5% Chardonnay, and makes for a beautiful cava to pair with dinner, or for sipping on after dinner.

According to a comprehensive study by UNESCO, the best place on planet Earth to grow grape vines is… Priorat, Spain. Over a century ago Priorat, was abandoned by the last of the monks who had tended the land for four hundred years. Left behind were ancient Cariñena and Monastrell vines, producing some of the highest quality grapes on earth in some of the harshest conditions. Here, the soil is thick, flaky schist, literally packed with iron and minerals. With the heavy marine influence, blistering hot days and cool nights, this moonscape is suitable only for grapes, not even grass. Parmí, a new estate in Priorat, owns vines that are over a century-old, owned by three Italian amici, Parmí approaches the craft of winemaking with the knowledge, convictions, and best practices of Northern Italy, where clarity of fruit reins supreme. How appropriate this mentality is for Priorat! With expert French-oak fermentation, individual grape picking, and a single-bulb cellar sensibility, this estate is truly making some of the most inspired wines in Europe, not just Spain. Parmí is situated at ground-zero for Priorat’s best Cariñena. As fascinating, mysterious, and head-spinning as these wines are, perhaps the wines of Parmí can in fact be summed in one word: searing. The intensity is almost other-worldly–enveloping the nasal passage, penetrating the palate and epithelium, and over-loading those message-carrying scillia that tell our brain what we’re smelling.
Parmi L’Infant 2007 is a mix of 80% Garnacha and 20% Carinena.

As we enter into the holiday season, a sherry tasting and dinner just seems right. Luckily, our friends at American Northwest and Bin 41 of West Seattle were happy to pair up with up and put on this fantastic event.
We’ll be serving up six courses prepared specially by our head chef Clay Kinsey, and specially matched with six of the best sherries that the American Northwest portfolio has to offer. You’ll also have the chance to sip on a sherry cocktail and mingle, purchase bottles of sherry from Bin 41; and learn more about sherry, sherry pairings, sherry making, and much more from Lucia a longtime representatives of Lustau sherries.
This is certainly an event you don’t want to miss!
Here’s how it’ll work…
You’ll arrive at Pintxo to a greeting of a sherry cocktail for our 6:30pm meet and greet. This will give you time to sip on something tasty, chat with friends, or meet a few new ones!
Following the cocktail meet and greet, we’ll seat parties for dinner service, which will start at 7pm. Dinner service includes a selection of 6 different sherries and food pairings.

We’re super excited to participate in this celebration of the classic cocktail because not only does it give us a chance to showcase our sherry negroni variation, the SanLucar Negroni, it also gives us (and you) and chance to give back to the community.
How it Works
Negroni Week is brought to you by Campari and Imbibe magazine, and includes bars and restaurants around the globe serving up classic negronis and negroni variations in celebration of the negroni, and as a means of offering up donations to local charities of choice.
A portion of the proceeds from every negroni or negroni variation sold goes to a charity of choice. Pintxo has opted to support Pike Market Child Care and Preschool (PMCCP), a local child care and preschool institution offering high quality, affordable child care and high quality nutrition to Seattle families of all income levels.
Over 70% of all families serviced by PMCCP fall at, or below, the poverty line. To best serve these families, and ensure that all children are given access to high quality care and nutrition, PMCCP offers tuition on a sliding scale. These tuition assistance programs are heavily funded through local donations to the program, and Pintxo is proud to direct its Negroni Week funds to the program. It is our hope that you’ll join us in supporting this great cause, while also enjoying a night on the town and a great cocktail!
